Warming Fennel & Broccoli Quinoa Salad

This is one of those beautifully simple meals that supports your body in more ways than one.

Fennel has long been used to ease bloating and digestive discomfort, helping to calm the gut and reduce that heavy, uncomfortable feeling many women experience. Paired with broccoli — a vegetable rich in compounds that support the body’s natural detoxification pathways and hormone metabolism — this dish becomes both soothing and deeply functional.

The addition of quinoa provides gentle, slow-releasing carbohydrates along with plant-based protein and fibre, supporting stable energy and balanced blood sugar.

Light, grounding, and easy to digest, this is the kind of meal I often recommend when digestion feels sensitive, hormones feel unsettled, or you simply want something nourishing that leaves you feeling good afterwards.

Simple food, meaningful support.

INGREDIENTS (2-4 serves)
1 whole fennel chopped
1 whole broccoli chopped
1 whole kale chopped
1 bunch of parsley chopped
1 cup of quinoa
1 boiled egg
1 cup of walnuts chopped
1bs of Zataar
2 garlic gloves
1 tbs of cumin seeds
1 tbs of fennel seeds

FOR THE DRESSING
3 tbs of olive oil
1 whole lemon juiced
1 tsp of cumin
1 tsp of sumac
1 tsp of tahini
Pinch of salt

METHOD
1. Preheat oven to 200 degrees Celsius
2. Put fennel and broccoli in pan with olive oil, cumin and fennel seeds for 20 minutes or until brown
3. Combine quinoa with 1 3/4 cup of water in a medium pot with a teaspoon of chicken stock and bring to boil and then simmer for 15 minutes. Remove from heat and let it sit for 10 minutes. Fluff with a fork.
4. Fry up garlic and olive oil until garlic starts to brown then put kale in and cook until it is sautéed and put in a large mixing bowl
5. Mix dressing with a whisk
6. Combine all ingredients together vegetables, kale, quinoa,chopped walnuts, dress spoon on zataar
7. Top with a boiled egg or any protein of your choice (butter beans would be a delicious vego option here)
